These macarons are for all the breakfast lovers. I personally prefer just a cup of coffee in the morning, but an entire spread of macarons might make me reconsider my go to breakfast. My favorite macarons are probably the doughnuts. Who can resist a pink frosted doughnut with rainbow sprinkles?
To make the eggs, coffee, bacon, and doughnuts I piped the macaron shells in various shapes. Then I decorated them with royal icing and filled them with coffee buttercream.
For the bacon macarons, I used a wilton paintbrush to paint stripes of burgundy and red gel food color inside of the piping bag. Then I filled the bag with the macaron batter and piped long rectangles. I accidentally left this pan in the oven for too long so the edges got a little too brown and burnt, but it was a happy accident because it made the bacon look more realistic.
I really wanted to replicate latte art for the coffee macarons, but my plan only kind of worked. I used flood consistency of royal icing and drew a toothpick through to make a design….this almost looks like a latte?
I think these would be the cutest to addition to any breakfast or brunch. You can be creative with the fillings too; I think a maple bacon buttercream or even fruity cereal filling would be amazing!
