Like every other person on the planet, Fall is my favorite season. I love the crisp air, the coziness, all the colors changing outside….and yes, the return of the pumpkin spice latte.
I was craving something cozy, but didn’t really want a whole cake made out of pumpkin. I found this recipe for Sticky Toffee Pudding Cake from one of my favorite blogs, Style Sweet CA. It’s everything you want in a fall cake; it’s sticky, sweet, and perfectly spiced. I added cinnamon to the batter and baked the batter in one 6 inch pan and three 4 inch pans. The other two 4 inch cakes didn’t make it in the pictures because we might have eaten them as soon as they were warm out of the oven, sorry, not sorry.
I would highly recommend trying this recipe out. We don’t love super sweet desserts, so I left out the frosting and caramel on the top, but it was still so good! Without the frosting and caramel it looked a little plain, so I went heavy with the toppings. The cake is topped with fondant leaves, baby pumpkins, pumpkin spiced macarons and basically looks like everything Fall landed on top of it.
I hope you make this cake and enjoy it warm out of the oven with a cozy cup of coffee. Fall only lasts a few weeks here in Montana, we’ve already gotten a few snow storms so this is sure to keep you cozy and warm. Happy Fall!
