Galentine’s Day is one of the best holidays of the year. Invented by the character, Leslie Knope in the show Parks and Rec, it’s a day for ladies to celebrate ladies while kickin’ it breakfast style! I’m totally game for any holiday meant for celebrating the amazing women in my life…plus waffles! This Galentine’s Day dessert spread is inspired by Leslie’s love of breakfast foods.
I had so much fun putting this little spread together. I made a stack of waffles piled with layers of greek yogurt, strawberries and topped with the cutest little sugar cookie egg hearts. A Galentine’s Day dessert spread wouldn’t be complete without bacon, so I cut and decorated a few cookies to look like bacon. They also happen to be the perfect size cookie to dunk into a cup of coffee.
My favorite part of the spread is probably the tiny little egg heart cookies and mini sprinkled donuts. Nothing says treat yo self like being able to put down as many of these tiny treats as you can. If you need even more mini breakfast dessert inspiration check out this macaron breakfast spread.
Admittedly, my waffle game needs some work. I spent a good chunk of my morning/afternoon testing out different waffle recipes and they just weren’t up to Leslie Knope standards. If anyone has a go-to waffle recipe PLEASE leave it below! I’m suddenly obsessed with finding the perfect fluffy, buttery, waffle recipe.
The mini doughnuts are made from this King Arthur Flour recipe and I love how they turned out! They’re a little more dense than recipes I’ve tested before so they actually taste like doughnuts not just doughnut shaped cupcakes. I topped them with a quick ganache made from equal parts chocolate chips and half & half.
