We’ve been baking a birthday cake for Jesus for as long as I can remember. This year, my sister wanted to make a cake decorated with gingerbread cookies like this one. I loved the idea and decided to make a smaller version since it would just be our family eating it.
I’m laid back in almost every aspect of my life except for when it comes to baking and decorating. I turn into a crazy perfectionist and I need everything to be color coordinated and done perfectly. This project was fun because everyone got to decorate the cookies the way they wanted to and it could be messy and colorful. Also, I let my sister’s spongebob squarepants cookie go onto the cake and I honestly love how random and funny it is.
To make the cookies, I used Sweet Sugarbelle’s recipe that can be found here. I actually don’t have a sweet tooth and almost never eat what I bake, but these cookies were SO good.
I didn’t have a cutter for the gingerbread pieces, but I knew I wanted to bake a tall 6 inch cake, so I just folded some paper into little templates for different gingerbread house pieces and cut them out with a sharp knife.
I love how this cake turned out. It’s a bit messy, colorful, and perfectly unique. I love that everyone gets to make their mark on the cake and I think making this cake will have to become a new family Christmas tradition.
